Fire cider used: Berries, Florals & Honey | Honey used: Chai Infused Honey
Our Berries, Florals & Honey fire cider brings orange, cinnamon and clove, and those go right along with apples. Chai Infused Honey sweetens the batter and makes a quick glaze brushed on while the muffins are still warm. They're a good weekend bake for fall.
Ingredients
Muffins
- 3/4 cup whole milk
- 2 tablespoons Fire Cider: Berries, Florals & Honey, shaken well
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1/2 cup packed light brown sugar
- 1/4 cup Chai Infused Honey
- 2 large eggs
- 1/2 cup neutral oil or melted unsalted butter
- 1 teaspoon vanilla extract
- 1 1/2 cups peeled, finely diced apple (about 2 medium)
Glaze
- 3 tablespoons Chai Infused Honey
- 1 tablespoon unsalted butter
- 1 teaspoon Fire Cider: Berries, Florals & Honey
Steps
- Heat the oven to 375°F. Line a 12-cup muffin tin with paper liners or grease it.
- Stir the milk and fire cider together and let it sit 5 minutes.
- In a large bowl, whisk the flour, baking powder, baking soda, salt and cinnamon.
- In another bowl, whisk the brown sugar, Chai Infused Honey, eggs, oil and vanilla until smooth, then whisk in the milk mixture.
- Fold the wet ingredients into the dry ones just until combined, then fold in the apple.
- Divide the batter among the cups, about three-quarters full.
- Bake 18 to 22 minutes, until the tops spring back and a toothpick comes out clean. Batters with honey brown faster, so check at 16 minutes.
- While they bake, warm the glaze ingredients in a small pan over low heat just until the butter melts. Stir and take off the heat.
- Let the muffins cool 5 minutes, then brush the glaze over the warm tops.
Tips and storage
- Baking changes fire cider's flavor. The vinegar mellows in the oven and the spice notes come forward. The glaze is brushed on after baking, so it keeps more of the fire cider and honey flavor.
- Keep muffins in a covered container at room temperature up to 2 days, or freeze up to 2 months.
- Refrigerate fire cider after opening.
