Honey used: Lavender Infused Honey

A Collins is a tall, fizzy lemon drink, and it's a nice way to taste our Lavender Infused Honey. The lavender comes through gently in a tall, cold drink. It's light and pretty, and it's good for a porch or a shower.

Serves 1 | Prep 5 min

Ingredients

  • 2 ounces vodka
  • 3/4 ounce fresh lemon juice
  • 1/2 ounce Lavender honey syrup (stir 1/4 cup Lavender Infused Honey into 1/4 cup warm water until it dissolves, then cool)
  • 3 to 4 ounces chilled club soda
  • Ice
  • A lemon wheel and a sprig of fresh or dried lavender (optional)

Glass and garnish

Collins or tall glass, lemon wheel, lavender sprig.

Steps

  1. Add the vodka, lemon juice and honey syrup to a shaker with ice. Shake for about 10 seconds.
  2. Strain into a tall glass filled with fresh ice.
  3. Top with club soda and give it one gentle stir.
  4. Garnish with the lemon wheel and lavender sprig.

Tips

  • The honey syrup keeps in a covered jar in the fridge for up to 2 weeks.
  • For a pitcher, multiply everything except the soda by the number of drinks, chill, and top each glass with soda as you pour.
