Autumnal Pasta with Sweet Potato, Kale, Sausage and Honey (Vegetarian Option)
Craving something both sweet and savory? Try this pasta dish! Packed with nutritious fall veggies, sausage, feta cheese and (of course) honey, it’s the perfect comfort food to brighten up your table and help you eat seasonally during these fall months.
We love using our Raw Forest Honey for this recipe, but our Whiskey Barrel Aged Honey would also be delicious!
Pasta:
1 Yellow onion, chopped
1 Bunch Tuscan kale, chopped
1 Small bunch parsley, minced
3 Cloves of garlic, chopped (ok, 4 if you’re really committed)
2 Small Sweet potatoes, peeled and diced
4 Sweet italian sausage links (omit or add Field Roast Apple and Sage Sausage for a vegetarian option - you could go Hot Italian Sausage to add a spicy note) - I like these chopped into bite size pieces. They cook faster. You can always saute these in oil separately and chop after cooking as well. I like the flavor from the sausage cooked into the other ingredients.
1 lb pasta, any small shape (we used trofie)
1 C. Feta cheese
2 T. Olive oil (or more as necessary while cooking)
¾ c raw pumpkin seeds
1 tblsp dried thyme
Kosher salt
Honey Mustard Vinaigrette
½ c. Olive Oil
¼ c. Apple cider vinegar
1 ½ T. Dijon mustard
1 ½ T. Edgewood Apiaries Raw Forest Honey
Salt and pepper to taste
Directions:
Set water for pasta to boil, ensure it contains salt. When it comes to a rapid boil, add pasta and cook for time noted on the box. We typically use gluten free pasta. At cook time, drain and toss onto the cooked salad vegetables (instructions below). Add vinaigrette and pumpkin seeds, toss to coat & mix well. Add crumbled feta. Toss again. Plate & Serve.
Vegetable Cooking Instructions: Saute onion in olive oil, sprinkle with salt until caramelized. Add garlic and stir. Add sweet potato, sprinkle with salt and cover to steam until they are al dente. Add kale, sprinkle with salt. Allow to cook for a few minutes before adding chopped sausage. Cover to cook. Stir to ensure meat does not stick. Add a little more olive oil as necessary. Taste to ensure composition is well salted. Pull off heat and place in a large serving bowl.
